Vermicilli Dessert

Vermicilli Dessert is known in Indian as Sheer Kurma. This heavenly creamy dessert is usually full of sugar and ghee but no, not here! This dish is a firm favourite of my son Zain and I like to make it with olive oil and a some fruit sugar so diabetics can enjoy this delectable dessert too. The yumminess factor of the dessert is still there but without the calorific sugar and ghee!

This Vermicilli Dessert known has sheer kurma can be enjoyed in the winter or summer. Enjoy this heavenly creamy dessert without the ghee and spoonfuls of sugar!

1.5 litires skimmed milk
1 tbsp olive oil
100g wholewheat vermicilli
a few saffron threads
2 tbsp sunflower seeds (optional)
1 tsp ground green cardamom
1/4 tsp ground cinnamon
4 tsp fruit sugar (for children) or sweetener (for adults)
4 slivered almonds or crushed
4 pistachios slivered or crushed


Boil the milk until reduced by a quarter
Heat the oil and add the vermicilli, stirring gently
Add the milk to the vermicilli
Add the saffron, sunflower seeds, cinnamon, cardamom and simmer for 5 minutes
Stir in the sugar substitute
Garnish with nuts and serve immediately
