Vegetable Noodles with Chilli

This spicy vegetable noodles with chilli dish makes a quick and hearty lunch. It is less stodgy than pasta, and can be made with wholewheat noodles to make the recipe more healthy.

These stir-fry vegetable noodles are a great way of getting some veggies in your daily intake. They have a mild, sweet flavour that kids will love. For a spicier kick, add a finely chopped red chilli.
Ingredients

4 portions wholewheat noodles
2 tbsp olive oil
1/2 tsp black pepper
1 cup chopped red / green / yellow peppers
10 cherry tomatoes cut in half
a handful of chopped coriander
1 red onion thinly sliced
a pinch of salad
2 chopped spring onions
1/2 tsp multi-purpose seasoning
1 inch grated root ginger
4 tbsp pasta sauce

Instructions

Put noodles to boil whilst chopping vegetables
Heat oil and fry sliced onion
Add all of the remaining ingredients except for spring onions, coriander, lime and pasta sauce
Gently stir fry on a low heat being careful not to break up the tomatoes
Add the pasta sauce and cook on low heat for one minute until the sauce is warm
Add the noodles to this sauce and mix gently
Switch off the heat, and garnish with coriander, lime juice and spring onions
