Sweet Chilli and Lime Salmon Parcels


These delicious Sweet Chilli and Lime Salmon Parcels are amazingly aromatic and are sure to tickle your tastebuds!

You will not be disappointed at this simple but delectable dish.

Salmon is packed with Omega-3 fatty acids which makes this great best “brain food’.

The simplicity of the dish is refreshing and is a firm favourite with kids and grown-ups.
Sweet Chilli and Lime Salmon Parcels

Recipe Type: Main
Prep time: 40 mins
Cook time: 20 mins
Total time: 1 hour
Serves: 4

500g salmon or white fish fillets
juice of one lime
1 red chilli finely chopped
2 tbsp sweet chilli sauce
handful of chopped spring onions
handful of chopped coriander
1 tbsp olive oil
1 tbsp brown sugar


Ensure all bones are removed from the fish fillets
Grease some foil with olive oil
Mix the remaining ingredients together except for spring onions and coriander, then brush over the fish
Leave the marinade on the fish for 30 minutes for the fish to absorb the flavours
Place fish on foil and fold over and place in oven for 20 minutes on Gas Mark 6
Cook fish until flesh is flaky and opaque (not translucent), remove from foil, sprinkle spring onions and coriander, squeeze some more lime juice and serve with fluffy basmati rice.
