Stuffed Pasta Shells

This delicious pasta dish of Stuffed Pasta Shells is a real delight! Filled with finely chopped vegetables with a garam masala and lemon seasoning, these pasta shells are fantastic, a big hit with adults and kids!
Stuffed Pasta Shells

A deliciously simple recipe allowing you to get some of your five a day!

500g large pasta shells (conchiglioni)
1/2 jar pasta sauce eg Ragu
red, yellow, green pepper finely chopped
2 tomatoes (flesh removed) and finely chopped
1 red onion finely chopped
1/4 tsp salt
1/4 tsp black pepper
1/4 garam masala
2 tbsp olive oil
handful of grated cheese


Boil the shells until cooked but firm
Whilst shells are cooling, chop peppers, tomato and red onion
Season veggies with salt, pepper, garam masala and lemon juice
Grease a large oveproof tray
Fill shells with 1 tsp of chopped veggies into each shell and place onto ovenproof tray
Once all shells done, cover with pasta sauce
Sprinkle with grated cheese
Pop into hot oven for 5-10 minutes until cheese slightly melted
Garnish with fresh basil or mixed dried herbs
