Spicy Vegetable Omelette

This spicy vegetable omelette makes a tasty meal as breakfast, lunch or supper and can be prepared very quickly with little washing up after!

This healthy spicy vegetable omelette can be prepared in minutes without compromising on the taste!
Ingredients

2 eggs beaten
2 tbsp olive oil
salt and pepper to taste
1 green chilli finely chopped
1/2 small red onion thinly slices
handful of sweetcorn
handful of chopped peppers
1 chopped tomato

Instructions

Mix all of the ingredient together except for oil
Heath oil in a non-stick frying pan
Add the mixture and cover with a lid until one side is cooked
Turn over and cook until other side is golden brown
