This healthy spicy vegetable omelette can be prepared in minutes without compromising on the taste!
Ingredients
2 eggs beaten
2 tbsp olive oil
salt and pepper to taste
1 green chilli finely chopped
1/2 small red onion thinly slices
handful of sweetcorn
handful of chopped peppers
1 chopped tomato
Instructions
Mix all of the ingredient together except for oil
Heath oil in a non-stick frying pan
Add the mixture and cover with a lid until one side is cooked
Turn over and cook until other side is golden brown
