Spicy Potato Hash

Anything with potatoes is sure to go down well, but this delicious delight can be made so quickly with any left over bits of veggies. To make it a more balanced meal, I serve it with couscous and a lovely runny egg!

This scrumptious Spicy Potato Hash is great for breakfast, lunch or dinner. It will definitely keep you going for a few hours and is a fantastic balance of carbs and protein!

1 large potato cut into 1cm cubes with skin on
1 small onion chopped
2 tbs olive oil
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp red chilli flakes
1/2 tsp cumin seeds
1/2 green, yellow and red pepper chopped
1 sping onion chopped
8 cherry or plum tomatoes halved
2 tbsp sweetcorn (optional)
1/2 cup of couscous
handful of fresh coriander finely chopped
2 eggs
juice of half a lemon


Put the potato cubes to boil whilst you start on the masala for the hash
Heat the oil in the pan and add the onion, salt, pepper, cumin seeds
Stir fry until the onion has slightly browned and softened
Add the peppers, tomatoes and spring onion and stir fry for a few minutes
Once the potatoes are boiled, drain add to the pan with the peppers and tomatoes
Stir fry on a high heat for 2 minutes
If very dry, add a 2 tsp water
Add the lemon and fresh coriander
Now turn the heat down to its lowest
Place the couscous in a large flat bottomed bowl
Add boiling water to the couscous so only 1/2 cm of water is above the couscous
Cover the couscous with a plate or lid
Make two wells with a wooden spoon in the pan, so the eggs can be added
Add the eggs, cover with a lid and cook for 2-3 minutes
Check eggs are cooked, else place under a grill for a further 2 minutes until whites are cooked and yolk is runny
Crack an egg open into each well and leave on very low heat
The couscous will have absorbed the water and be ready
Season the couscous with salt, pepper, olive oil
Place the couscous on a plate
Using a fish slice, carefully add a portion of the potato hash with an egg onto some plated couscous.
