This classic Indian side dish is a great way of getting spinach into one’s diet. My kids loathe spinach as did I, but after eating this non-greasy delight of quick saag aloo, this has become one of my firm vegetarian favourites!
Ingredients
2 tbsp olive oil (not extra-virgin)
250g fresh spinach washed and drained
2-3 small potataoes, peeled and chopped into 1 inch cubes
1 green chilli finely chopped
1/2 small onion finely chopped
1 tsp whole jeera
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp turmeric
1 tbsp coriander and cumin powder
a handful of chopped coriander
Instructions
Heat up the oil slightly
Add the onion and cook until slightly brown and softened
Add the jeera, chilli, salt, pepper, turmeric, coriander and cumin powder and cook for a minute
Add one cup water, potatoes and simmer
Once potatoes parboiled, add the spinach and simmer on a low heat
When the potatoes are cooked, switch off the heat and sprinkle with chopped coriander and serve with fresh hot roti or naan.
