These delicate spicy potato puffs are unbelievably tasty for something so easy to make!

4 medium sizes potato, peeled, cubed and boiled
1 block of puff pastry (defrosted)
1/4 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp turmeric
juice of half a lemon
a handful of chopped coriander
beaten egg (optional)

Boil the potatoes, run cold water over them, drain and cool for 10 minutes
Once cool, chop using a large knife over a chopping board (not a masher)
Add all of the spices and coriander and mix gently but thoroughly
Cut the pastry block into 16 squares
Roll out each cube using a rolling pin trying to preserve the square shape
Roll out to a thickness of 2-3mm.
Add the spicy potato to the lower middle of the rolled out square
Fold over the uncovered part and seal with your finger by pressing down
Seal the sides with your fingers (press down and then double over the edge slightly)
Using a sharp knife, grently score the top
Brush with egg or milk and place in a hot oven for 20-30 mins until golden brown
