
These lovely potato discs can be made in 10 minutes. Today was my first attempt at these and the family gave me the thumbs up!
Potato Discs
Recipe Type: Starter

Total time: 25 mins
Serves: 4
Ingredients
4 medium sized potatoes
drizzle of olive oil
a squirt of lemon juice
a generous sprinkle of sea salt
a sprinkle of mixed dried herbs
a sprinkle of multi purpose seasoning
a sprinkle of red chilli powder
chopped coriander for garnish
Instructions
Wash the potatoes, leaving skin on to retain goodness
Slice the potatoes but don’t cut all the way down, you want to create a “fan effect” where the potato is not sliced down completely
Cook in microwave for 5 minutes. Don’t use the potato setting on the microwave as this can make the bottom of the potato quite hard
Check if tender using a knife else cook for another 2-3 minutes
Once the potatoes are soft, cut into slices / discs. This will be easy as you have already “fanned” them out
Lay on a plate and drizzle with olive oil, add the spices, then squirt lemon juice and coriander. By placing the olive oil first, the spices are nicely absorbed.
Serve immediately – they won’t last very long !
