Potato and Pea Pilau Rice

Potato and Pea Pilau (or pulao) rice is such a versatile one-pot meal. It is lightly spiced hence appealing to children and a great way to dress up plain rice for a special occasion.
Potato and Pea Pilau Rice

Potato and Pea Pilau (or pulao) rice is such a versatile one-pot meal. It is lightly spiced hence appealing to children and a great way to dress up plain rice for a special occasion.
Ingredients

300g basmati rice washed
1 onion thinly sliced
1 tsp salt
1 tsp black pepper
2 whole green chillies (optional)
2 tbsp Olive Oil Spread (or butter)
2 star anise
4 cloves
2 black cardamon
1 cinnamon stick
1 medium sized potato chopped
1/2 cup peas
1 tsp garam masala

Instructions

Heat the spread / margarine in a pan until melted
Add the onions salt, pepper, and whole spices
Cook onions on medium heat until golden brown
Add the garam masala
Add the potatoes and 1/2 cup water
Cook on medium heat for 5 minutes, then add the rice
Cook on low heat for 10 minutes until the rice is partially cooked
Add the remaining vegetables
Simmer until water has evaporated and rice cooked
If rice is not cooked and water has run out add 1/4 cup water and cook
Once rice is cooked, cover with a tea towel the lid of pan
Leave on lowest heat for a few minutes and then ready to serve
