
This simple spicy okra dish is one of my favourites. My husband did not like okra until I made it this way. It is quick to prepare using common indian spices and a great way of eating healthy greens!

This simple spicy okra dish is one of my favourites. My husband did not like okra until I made it this way. A great way of eating greens!
Ingredients
500 g okra
1 small onion sliced
1 small piece of fresh grated ginger
6 cloves of garlic
1/2 tsp salt
1/2 tsp black pepper
2 tbsp tomato puree
2 tbsp oil
1/2 tsp turmeric
1/4 tsp chilli powder
1/2 tsp garam masala
handful of fresh chopped coriander
1 tbsp lemon juice
Instructions
Wash the okra and leave to dry else dry with paper towels
Top and tail the okra and chop into 1 inch pieces
Heat 1 tbsp of oil and add the okra until golden brown
Take out the okra from the pan and heat another 1 tbsp of oil
Fry the sliced onion, garlic and ginger until light golden in colour
Add the salt, pepper and all spices and dry roast for a minute
Add the chopped okra and tomato puree until the okra is coated with the spices and tomato puree
Add half a cup of water and simmer for 20 mins on a low heat whilst covered with a lid
Sprinkle a dash of lemon juice and chopped coriander and serve with chapattis or pitta bread
