Kashmiri Chai

Kashmiri Chai is an exotic, spiced tea from the Himalayas of Northern India. Aromatic and warming, natives of India often comment that the authentic and delicious recipe reminds them of home. Great as a autumn or winter treat!

Kashmiri Chai is beautiful pink indulgent milky tea that is full of aroma and taste!
Ingredients

4 tsp Kashmiri tea leaves
3 cardamom pods, crushed seeds only
1 star anise
½ cinnamon stick
1 litre water
1 litre milk
4 tbsp sugar
1 tbsp rose syrup (available from Asian supermarkets) or rosewater
3 tbsp crushed almonds and pistachios (crushed or ground)

Instructions

Place the Kashmir tea leaves, cardamom seeds, star anise and cinnamon stick into a large saucepan.
Boil.
Switch off the heat and add the water.
Boil again.
Add the milk and simmer until the volume of liquid has reduced by a third.
Add the sugar and simmer for a further minute.
Add the rose syrup and stir well to combine.
Strain the mixture through a fine sieve.
Stir in the ground pistachios and almonds.
Serve the hot tea immediately.
