These healthy mini cheesecakes with fruit are very quick to rustle up and can be made with low fat ingredients. Great for kids as a desert or a party food!
100g cream cheese (low fat if preferred)
1 tbsp icing sugar (can use caster sugar)
8 digestive bisuits (can use low fat digestives)
a punnet of fresh raspberries or blueberries
icing sugar for dusting (optional)
Mix the cream cheese and icing sugar
Divide amongst the 8 bisuits and spread evenly
Place 4-5 rasperrbies or 6-7 blueberries each
Dust with icing sugar and serve
TIP: Can layer a few times for a more substantial dessert
