Healthy Carrot Halwa

Carrot Halwa or Gajar Halwa is an extremely popular Indian dessert that is enjoyed all over the world. It provides plenty of vitamin A which helps to maintain good vision and glowing skin.
Healthy Carrot Halwa

This version of Gajar Halwa is a more healthy version made without butter, ghee and evaporated milk but tastes just as good!
Ingredients

1 tbsp unsalted butter
2 cups carrots (peeled & shredded)
1 cup semi-skimmed milk
5-6 crushed cardamoms (remove skins)
1/4 cup sweetener
5 chopped pistachios (optional)

Instructions

Dry roast cashews and chop cashews and set aside
Peel and shred carrots
Melt butter in a heated pan
Add shredded carrots and cook for about 8-10 minutes or until the carrots absorb the butter and cook down, keep stirring
Add milk
Allow the milk to cook for 6 minutes, carrots will soften and milk will evaporate slightly
Keep stirring
Add the crushed cardamoms
Add the sugar
Increase temperature and stir
Once milk evaporated, add half the pistachios
Garnish with remaining pistachios

Notes

Instead of using cream, whole milk, and evaporated milk, use semi-skimmed milk
Instead of ghee (clarified butter), use 1 tbsp of butter
