- Ensure chicken is clean and all skin removed
- Cut deep grooves into the chicken but not all the way through (this will allow the chicken to abosrb the marinade)
- Mix all the ingredients together and coat the chicken, ensuring the mix is inserted into the grooves
- If possible, cover with cling film and leave overnight in the fridge else leave for 30 mins or few hours
- Place the chicken pieces either in a greased george foreman grill cooking each side for seven minutes each.
- If you do not have a grill, brush chicken with oil, wrap the chicken in tin foil and place in a hot oven at 180 degress for 40 minutes to one hour.

If I want to make piri piri chicken, do I replace the tandoori masala with the piri piri powder?
To make piri piri chicken, you only need 3-4 ingredients: chicken, pepper, olive oil and piri piri powder. The piri piri powder contain most of the spices such as paprika, oregano, dried garlic, chillies and salt. Mix the piri piri powder with olive oil and smear all over the chicken and either grill on each side or bake in oven wrapped in foil to preserve moisture. Try to baste with oil once or twice during cooking process to prevent the chicken drying out 🙂
