Ginger Masala Chai

Masala Chai is the best wake-me-up cup of tea ever and can be made with full fat or skimmed milk. In India and Pakistan it is served famously in glasses every time you ask for tea. A great accompaniment with bombay mix (chevda), samomas and bhajis/pakore.

Ginger Masala Chai is everything a Masala Chai should be, its rich, spicy, invigorating with a wonderful sweet aromatic flavour. A cup of ginger masala chai sets me up for the day. As well as being so yummy it has numerous health benefits such as warding colds and flus and also aids digestion.
Ingredients

500 ml whole milk (or skimmed milk)
100 ml water
4-6 tsp sweetener (or agave nectar)
4-5 few cardamom pods coarsely crushed
small piece of grated ginger
a small cinnamon stick
2 strong teabags, such as Darjeeling, Ceylon or Assam

Instructions

teabags of your choice (preferably strong)
Bring to the boil then reduce the heat and simmer for a few minutes
Turn off the heat and strain into cups
Serve piping hot
