This lovely tangy chickpea salad with red onion is packed with protein and takes just minutes to prepare. A great accompaniment to any vegetarian or meat dish!
1 tin chickpeas
handful of fresh chopped coriander
1 tbsp lemon juice
2 tsp olive oil
5 cherry tomatoes chopped in half
1 red onion thinly sliced
pinch of black pepper
Drain the tin of chickpeas and place in salad bowl
Add all of the remaining ingredients
Toss thoroughly using (clean!) hands
