- Mashed potato flakes
- 1/2 tbsp
- Salt
- 1/2 tbsp
- Black pepper
- 1/2 tbsp
- Red chilli powder
- 1/2 tbsp
- Garam Masala
- 2 tbsp
- Lemon Juice
- 1 handful
- coriander finely chopped
- 4 tbsp
- Sunflower oil

Do you ever have some chicken left over from a curry that you don’t really want to eat again but don’t want to thrown away either? Simply shred the chicken, add some mashed potato, spice it up and away you go!

You can adjust the quantity of mash or chicken depdending on how much you have

- Prepare the mash potato and let it cool for 10 minutes
- Add the shredded chicken
- Add all the powdered spices and coriander
- Mix thoroughly until the potato and chicken mixture is evenly spiced
- Shape into small patties
- Dip into egg
- Shallow fry in hot oil for 3-4 minutes on each side or until golden brown
- Serve with chutney, raita or ketchup
