Baked Breaded Cod

This is one of the yummiest fish recipes ever.

Accompanied with a sublime sweetcorn and tomato salsa instead of the usual unhealthy chips, this is a firm favourite for those trying to reduce a few pounds without compromising on taste!
Baked Breaded Cod

Recipe Type: Fish
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Serves: 2

2 pieces of fresh cod
2 tbsp wholemeal breadcrumbs
1 tbsp olive oil
100g sweetcorn (boiled or tinned)
5 cherry or plum tomatoes
1 spring onion (optional)
juice of half a lemon
a handful of chopped coriander
salt and pepper to taste
2 tbsp milk
i red chilli finely chopped


Cover the cod with milk then drain (this will allow the breadcrumbs to stick)
Dip the cod in the breadcrumbs ensuring it is evenly coated
Place on greasproof tray and bake for 30 minutes Gas Mark 7, 180 degree
In a frying pan, add the olive oil and all of the other ingredients except for coriander
Stir fry these ingredients for 5 minutes until the sweetcorn kernels turn a light golden brown
When the fish is cooked, plate up next to cod, sprinkle with fresh coriander and serve
