Creative Cooking

I sometimes ask myself if I get bored of cooking.  Currently I am in between contracts and do feel that my life revolves around cooking, cleaning and looking after children.  In fact when I think about it, it’s the cooking element of the day that makes it more interesting.  All other aspects of the day remain the same; laundry, cleaning, childcare, but what can really add some variety to a day and make it more creative and interesting is attempting a new or modified recipe.

For example, I regulary make oven baked masala salmon with home made wedges.  Yesterday I wanted something slighly different so decided to modify the recipe a little.  So I took some baby potatoes, boiled them and then tossed them into the fish marinade.  The result: an aromatic different dish which my husband complimented straight away saying “you would never find this in a restaurant!”  Too right you wouldn’t!!

Cooking enables me to be creative, for me to express myself and to have fun experimenting with new ingredients. I get bored of eating the same food day in day out so it’s no surprise my dishes get modified.  This makes the cooking process more innovative and for the family to devour something different!  Most people I know will not attempt a recipe if they don’t have all of the required ingredients.  This should not deter people but often does.  Simply substitute one ingredient for another.  I suggest you don’t experiment like this if you are hosting a dinner party but if it’s dinner for one or you and your partner, experiment away!  Occasionally I use basil or parsley when I have run out of coriander!  I was making chane one day and realised I had no potatoes, but added sweet potatoes instead, the dish turned out fabulous.  A common and healthier substitute for cream in curries is to use low fat Greek yogurt and olive oil instead of ghee.  So go ahead and enjoy some creative cooking, varying your recipes to add a twist.  You and your guests will be pleasantly surprised!
